When
it comes to food for the Restaurant, we are ardent
about sourcing the freshest and best quality local
ingredients for our menus, and over the years
we have sourced some wonderful produce, grown
and prepared by kindred spirits who reside mainly
in Devon and close to Combe House. With the exception
of cheese, everything is home-made at Combe!
We are also fortunate to have our own kitchen
garden which is carefully nurtured by Head Gardener,
Charlie O'Reilly. We would love to produce all
our vegetable requirements for the Restaurant,
however it would take a small army of gardeners
to do so! Instead, we concentrate on a limited
range which we use regularly. In the Summer months
our produce often finds itself on the plate within
minutes of being pulled or cut. Dry cured bacon,
pancetta and chorizos are specialities of ours.
In the pantry of the Georgian
Kitchen, the salting boxes are filled with
sea salt, spices and delicious cuts of Gloucester
Black Spot pork from Wallis's at Hemyock. We also
cure and smoke our own salmon and sea trout.
